2 lb. Ground lean beef or chuck
1 lg. Onion, finely chopped
1 16 oz. can of either (Red Kidney Beans, Black Beans, Pinto Beans or Chili Beans)
1 28 oz. can of crushed or diced tomatoes or whole tomatoes, chopped
1 16 oz. can tomato sauce
1 17 oz. can tomato juice
1 tbsp. Chili powder
1 tbsp. Paprika
1 tsp. oregano
½ tsp. cumin
½ tsp. black pepper
1 tsp. salt
¼ tsp, red ground pepper (Cheyenne)
1 clove minced fresh garlic or ¼ tsp. garlic powder

Brown beef in a large skillet or heavy bottom pot. Drain off all grease.

Add all remaining ingredients and simmer for one hour, stirring occasionally.

Serve hot topped with grated cheddar cheese
